Walk into any rice shop in Chennai and the first question is usually: puzhungal-a, pachai-a? Boiled or raw? Both come from the same paddy. The difference is what happens before milling, and it changes how the rice cooks, tastes and keeps.

What is boiled rice (puzhungal arisi)?

Boiled rice, also called parboiled rice, is soaked, steamed and dried in the husk before it is milled. That process moves some of the vitamins and minerals from the bran into the grain and hardens it. The result:

  • Grains that stay firm and separate after cooking
  • Rice that holds up well with sambar, rasam and kuzhambu
  • A light golden colour and a slightly longer cooking time

It is the everyday rice in most Tamil homes. Shop boiled rice. Read more in What is boiled rice?

What is raw rice (pachai arisi)?

Raw rice is milled straight from dried paddy, without parboiling. It is white and polished, cooks faster and softer, and is a little stickier.

  • Best for ven pongal and sakkarai pongal
  • Used for payasam, and for home-ground rice flour (idiyappam, kozhukattai, murukku, adhirasam)
  • Good for lemon rice and coconut rice when you want soft grains

If you are watching your blood sugar, boiled rice is usually the better everyday choice; see boiled or raw rice for blood sugar. For idli and dosa, neither is ideal on its own; use idly rice, which is made for batter.
