If you grew up in Tamil Nadu, puzhungal arisi (boiled rice) is probably the rice you ate every day with sambar, rasam and curd. But what makes it “boiled”, and why do so many families prefer it?

Boiled rice in one line

Boiled rice, also known as parboiled rice, is rice whose paddy is soaked, steamed (boiled) and dried before milling. Only after this is the husk removed and the grain milled. It is not pre-cooked rice; you still cook it at home like any other rice.

How boiled rice is made

  1. Soaking: cleaned paddy is soaked in water for several hours.
  2. Steaming: the wet paddy is steamed, which gelatinises the starch inside the husk.
  3. Drying: the steamed paddy is dried in the sun or in dryers.
  4. Milling: the husk is removed and the rice is milled.

We explain each step in detail in the parboiling process.

Key characteristics

  • Colour: slightly yellowish or golden.
  • Texture: cooks into firm, separate, fluffy grains that are not sticky.
  • Nutrition: during steaming, B vitamins and minerals move from the bran into the grain, so more of them stay after milling. It also contains more resistant starch.
  • Glycemic index: usually lower than polished raw rice.
  • Cooking time: slightly longer, about 30–35 minutes in an open pot (raw rice: 20–25), or 4–5 whistles in a pressure cooker.

Best dishes for boiled rice

Everyday meals with sambar, rasam, kootu and poriyal; curd rice; and variety rice like lemon, tamarind and tomato rice, because the grains stay separate. Many homes also use it for biryani, pulao and fried rice.

FAQ

Is boiled rice healthier than raw rice?

For most people, boiled rice is the more nutritious everyday choice because it keeps more vitamins and minerals and usually has a lower glycemic index. Compare them in boiled rice vs raw rice.

Does boiled rice need soaking?

Not necessarily. A 20–30 minute soak shortens the cooking time and gives softer grains.
